Sweet Potato
Sweet potato is a kind of tuber or root vegetable originating from South America. In the United States, they can also be called yams, however true yams are African and a different kind of root vegetable entirely
Storage
Sweet potatoes can be stored raw and unwashed in a cool, dark place away with ventilation. In such a location, they can last several weeks. If stored too long or with exposure to light, the potato may sprout or grow roots. They can be eaten safely after the roots or sprouts are cut off.
Usage
The whole sweet potato can be consumed, with or without the peel. It can be used in both savory and sweet contexts. It is commonly used in Southern, African, and South American cuisine.
