Nopales

Nopales are the edible flat pads of the prickly pear cactus, widely used in Mexican and Southwestern US cuisine.

Storage

To store fresh nopales safely and keep them crisp for 1 to 2 weeks, clean off the spines, wrap them in dry paper towels to absorb moisture, and place them inside a breathable plastic bag or an airtight container in the refrigerator

Usage

Preparation and Cleaning

1) Remove spines: Shave off the needles and bumps using a sharp knife or vegetable peeler while wearing thick gloves.

2) Trim edges: Slice off the outer rim and the tough base where the pad connected to the plant.

3) Rinse: Wash the pads thoroughly under cold water before dicing or slicing.
