Cauliflower
Cauliflower is a vegetable related to broccoli, cabbage, and kale that was first grown in the Mediterranean.
Storage
A raw head of cauliflower can be stored in a cool, dark place such as the fridge for up to 3 weeks. Individual cut cauliflower florets do not last longer than 3 days and should be stored in an airtight bag or container.
Usage
The leaves and white flowers of the cauliflower, called “curds”, are all edible. However, the leaves surrounding the curds are often discarded. The vegetable is prepared by cutting off the stalks and leaves then sectioning the curds out into individual florets. The curds can also come in different colors including orange, green, and purple.
